Why take this course?

Have you ever worried about, or been diagnosed with, high blood pressure, diabetes or cancer? Have you tried to lose weight, but failed? A healthy diet filled with fruits and vegetables is an excellent weapon for preventing and battling cancer, heart disease and obesity. It is a proven fact: cancer cells have 20 times more receptors for sugar then normal cells. If your diet is full of sugar, cancer will be more likely to get triggered and will grow faster.

Unfortunately we have been conditioned to rely too heavily on powerful synthetic medicines to cure these ailments. Few think about changing their diets to combat them. But throughout the history of medicine doctors never made this artificial separation between food and medicine. Treating elevated blood pressure, heart disease, cancer and diabetes with synthetic chemical medications is a recent, and largely unsuccessful, trend. You simply cannot prevent disease or restore health by taking pills.

In this course I teach you how to rethink every dietary choice and its impact on your health. You need this foundational knowledge to evaluate nutritional and medical claims and to design – and stick to – the food plan that is best for you.


The course explains the key role of each nutritional building block for healthy cells. It consists of 10 short lectures, each about 10 to 15 minutes long.


The first lecture is on proteins. Amino acids are building blocks for proteins. You break down the proteins in your foods into individual amino acids in your digestive tract. These amino acids are then absorbed into your blood stream and sent to all of your cells. The cells then construct from these amino acids the exact proteins they need for cell health.

The second lecture is about fats. Your body requires fat to function, but there are good and bad dietary fats and you will learn to select the best ones for your health.

Lecture three is about “simple” and “complex” carbohydrates. Carbohydrates are the main source of energy. The body and brain need a steady dose of sugars, but simple carbs can wreak havoc with your health. In this lecture you will learn about the best foods to supply the carbs you need.
Your body needs vitamins and minerals to get all your other nutrients to where they can do their jobs in your cells.

In lecture four you will learn about the best fruits and vegetables you can select as sources of vitamins, minerals, fibers and sugar.

Every few months a new diet makes a big splash in the media, promising instant health and weight reduction. Most of these diets are hazardous to your health, and diets cannot provide long-term weight reduction. In lecture five you will learn about the pros and cons of today’s most popular diets, and how you can design your own eating plan to maintain optimum health and body weight.

Lecture six is about your “healthy plate”. It explains exactly what you should and should not put on your plate – and the right portion sizes - to make sure that you maximize your nutrients consumption to keep your body healthy and to restore health when struck with cancer, heart disease and other ailments.

Lectures 7, 8 and 9 are about structure and function of the digestive tract and it importance in overall health of your body and its cells. You will learn how a malfunctioning digestive tract will prevent absorption of nutrients, starve your cells, lead to disease, and prevent recovery.

Finally, in lecture 10 you will learn what happens to all the nutrients in your food once they get absorbed from the digestive tract into your blood stream. The emphasis will be on how you use these nutrients to build, protect, restore and repair your cellular structures to heal yourself and keep yourself in optimum health.

Some foods are not discussed in my lectures. For example: cookies, cakes, chips or French fries are not considered food, because they have so few nutrients and so much sugar that they can make you sick and keep you sick - you will be much better without them. Also, there are no canned foods on my “healthy plate”. Food from cans and jars has few vitamins, but is full of preservatives and coloring agents that may contribute to coronary disease, cancer. Long term health and vitality are out of questions if cookies, candy, ice cream and canned vegetables/fruit are part of your regular diet.

Dr. Waks, Thank you so much for allowing our class to access your lectures. They were both interesting and very informative. Before listening to them, I thought I knew a good amount of information about nutrition, however, as I listened to the lectures I realized how much I didn't know and was learning. I especially found interest in the lecture on the Pros and Cons of Today's 'Diets'. I find that diets influence people of all ages, races, and genders and it is important, as a future nurse to be able to education them about how to nourish their body properly and healthily. I can't wait to learn more in your class lecture tomorrow. Thank you!!

Dr. Waks, Thank you so much for giving us the opportunity to watch your lectures on nutrition. You touch upon multiple topics that are extremely important to understanding how to eat healthy. I think one of the best lectures was the "Pros and Cons of Dieting". I really enjoyed how you discussed how there really is no good diet, only sensible eating. As a college student, it is sometimes difficult to eat healthy, but you explained how the more fruits and vegetables you get in your diet, and the more good fat that is eaten, the healthier you will be. The lectures really were great! Can't wait to hear you speak!

Dr. Waks I greatly appreciate the time and effort you put into constructing these thought provoking lectures. I enjoyed watching each of the sections and was glad that you could take such large topics and break them down into understandable sections for the lay person. My first degree was in nutrition so it is always nice seeing the topic being included in all areas of study. Currently I am working on my nursing degree and I find it imperative that nutrition be discussed as a vital aspect to prevention, treatment and management of conditions/diseases. I also agree with the concept that our intake of many medications can be decreased greatly by healthful diet modification. These lectures provide a great introduction to each topic and provide an easy way to apply it to our own daily lives. I particularly enjoyed the section on protein. I myself do not consume meat but I do eat fish so it was nice to see that these lectures were applicable to a wide variety of food consumers. Thank you very much and I greatly look forward to having you come speak to our class!

I loved the fact that you mentioned that there is no good diet. Diet's may work short term but people tend to resort back to prior eating habits. What works is changing thoughts and behaviors related to diet and thinking of food as fuel to get us through our day. I look forward to your discussion with the Nursing Students at Fairfield University in a few weeks.

I've read about 20 various quality books on nutrition in the past 3 months - the advice given in this course is fine. The use of the blackboard style lecture is a bit repetitive for me personally and I would like to see some colour and pictures etc to brighten and make the content more interesting.

Dr. Waks presents the content through a bio-chemical perspective which helped me develop a deeper understanding of nutrition. The course has afforded me the skills to make good choices to support optimal nutrition and a healthy lifestyle. Simply stated: This is how to eat”. The UDMY venue is convenient and effective. I like the ability to study and review material at my own pace, and to have the information as a resource whenever a need. This is a great on-line learning experience. This course was very instructive and comprehensive in the explanation of how the body works in processing food. The very specific and scientific reasons of how the right foods support healthy cells and the wrong foods cause problems. Understanding in detail how it all works motivates one to really change their diet. I like the presentation of the handwriting on the blackboard as it help you concentrate on the material. Dr Waks voice is soothing and interesting to listen to and her extensive knowledge engenders trust and belief in the importance of the material. This course is good for anyone wanting better health and anyone who wants to help others with improving their health. It is a video that can make a difference in the way one eats. For example people know that sugar is not good for everyone and especially those with cancer but it really explains why.
